Lexi’s Salad

We tried this salad in Australia during our travels. Our friend's wife made it for the BBQ dinner. In our opinion, it was the jewel of the whole dinner and we couldn't wait to test and make this salad ourselves. It turned out it is amazing even when you try to recreate it because the ingrediants just work so nicely together!

  1. I would recommend putting all the chopped vegetables and fruit – salad leaves, pepper, avocado and orange – into a large bowl.
  2. Put sunflower seeds into the pan on low heat and while watching them carefully slice your halloumi.
  3. Swap your full attention to the seeds in the pan not to burn them. Once browned, transfer them into the salad bowl.
  4. Now you can focus on your halloumi cheese. You can either fry or grill it but just make it slighly brown and hot. Once ready, transfer to your salad.
  5. The dressing time! Mix olive oil, red wine vinegar, honey and salt and pepper and pour it all over your salad. You’ll want to eat it every day!


1-2 packs of Mixed Salad Leaves
1 bell Pepper, chopped
1 orange, chop segments
1 avocado, chopped
20g sunflower seeds
200g halloumi, sliced
1 tbsp olive oil
1 tbsp red wine vinegar
1 tsp honey
Salt and pepper
